Chicken and Cheese Lasagna Roll-Ups

I found this recipe on Pinterest about a week ago, tried it tonight, and it is absolutely delicious! And I don't know about your menu, but this was definitely a change-up for us! Plus, it was super easy! It was made, ate, and cleaned up within an hour and a half, what more could you ask for?!?!?

Chicken and Cheese Lasagna Roll-Ups

Indgredients

  • 3 cups Chopped Cooked Chicken
  • 1 cup Ricotta cheese
  • 1/4 cup crumbled feta cheese
  • 1/4 cup grated Parmesan Cheese
  • 1/4 cup milk
  • 1/8 teaspoon white pepper
  • lasagna noodles, cooked and drained
  • 2 1/2 cups Prego Spaghetti Sauce

Directions

  1. In medium bowl, combine chicken, cheeses, milk, and pepper.
  2. Spread 1/2 cup mixture on each lasagna noodle; roll jelly-roll fashion.
  3. In a 13 by 9 inch baking dish, spread 1 cup spaghetti sauce.
  4. Arrange lasagna rolls, seam-side down in sauce in baking dish.
  5. Top with remaining spaghetti sauce.
  6. Cover
  7. Bake at 375 Degrees F for 30 minutes or until hot.
  8. Serve, if desired, with additional Parmesan cheese.

Cook Time: 30 minutes

Prep Time: 35 minutes

I know I'm always talking and posting about my Bailie on Facebook, but you know what? The phrase, "A man's best friend," is definitely true with her.  She would go everywhere I went if I let her. She is always there to cuddle with when I get home, good day or bad.  This pup constantly puts a smile on my face and makes me laugh on a daily basis.  Her personality and attitude couldn't be any better. Actually, at this moment in time she has managed to crawl  and snuggle her way in between me and the laptop....and is continuing to try and lick my face to get my attention (like she doesn't get enough of it already). This dog could play fetch for hours and never get bored. In fact, she will toss her toy on your lap or keyboard to get your attention. If that doesn't work, she starts to huff and puff at you. If the huffing and puffing doesn't work, she starts pawing at your hand and whatever you're trying to do. Then, her last resort is crawling on your lap no matter what you're doing.

Sometimes I wish this dog was human so I could have the best friend a person could ask for, but then I stop and think about it to realize that I do :)

Well the queen is begging to go to bed....mainly so she can have her nightly treat, so I'm off.  I'll leave you with an image that will for sure make you smile:

My Visitor


This would be my visitor I had during my first hour class this morning in middle school math.  Cooper, whom I had never met before, walked in to the room (probably looking for the classroom teacher) and let me pet him.  Then he laid down under the desk and stayed for the entire first hour until the teacher next door (his keeper) came to get him.  Such a sweet dog!!!!

Chicken & Dumplin Casserole

Made a new recipe I got from a post on Facebook for dinner tonight, really wasn't too bad! Definitely a comfort food for a cold day :) Here's the recipe:


CHICKEN & DUMPLIN CASSEROLE

The secret of this is not to stir anything. That's what makes your dumplings. When you dish it out, you have your dumplings on top. 

INGREDIENTS:
2 chicken breasts, cooked and shredded ( I use a store bought rotisserie chicken) 
2 cups chicken broth
1/2 stick of butter 
2 cups Bisquick 
2 cups whole milk
1 can cream of chicken soup (the herbed cream of chicken soup if you can find it)
3 teaspoons of chicken granules (I use Wylers)
1/2 teaspoon dried sage 
1 teaspoon black pepper 
1/2 teaspoon of salt or more to taste 

Directions: Preheat oven to 350 degrees.

Layer 1 - In 9 x 13 casserole dish, melt 1/2 stick of butter. Spread shredded chicken over butter. Sprinkle black pepper and dried sage over this layer. Do not stir.

Layer 2 - In small bowl, mix milk and Bisquick. Slowly pour all over chicken. Do not stir.

Layer 3 - In medium bowl, whisk together 2 cups of chicken broth, chicken granules and soup. Once blended, slowly pour over the Bisquick layer. Do not Stir.

Bake casserole for 30-40 minutes, or until the top is golden brown

Elementary PE

When was the last time you jumped roped? Yeah, I had to think about it too....anyway, that's what I got to do for three straight hours today with nine, 1st-3rd grade classes! I probably hadn't jumped rope since middle school. BUT I did find out I can still do the double-jump, where you jump the rope twice in one jump....yeah, that hadn't happened since I was in elementary school myself.  It was a killer on the knees the first few times, I'll tell ya that :) I had a blast in PE in today, can't wait to do it again!

Life So Far Since Graduating From College

This blog is going to be about a variety of things.  It will probably be mostly about my days as a substitute teacher and an actual elementary teacher (when life opens that door), but it will also be about my every day life and the things I do.  One day you might see a post about education, then next it might be some kind of project I'm doing or some new dish I have cooked.  Really just a place I can share my days :) I might blog every day, then it could be a week or so before you hear from me again.  But I will try my hardest to at least post something once a week! So if you want to follow me in my days, feel free!

Well after completing my degree, I was signed up to start substituting in the school district I student taught in and a few others right away.  Substituting started off slow before Christmas break, but it has definitely picked up since! I have gotten the opportunity to sub in middle school math, middle social studies, high school language arts, high school math, high school physical education, literacy tutor in elementary, and in a kindergarten classroom.  Then this afternoon I get to sub in elementary physical education. So you could say I have gotten quite the spread of opportunities.  The thing is, I have absolutely enjoyed every single day of it!

For now, that's all I'm going to post. Got to get ready for this afternoon! :)
